Apple cake (vegan)

Ingredients

  • 5070 g sugar
  • 130 g oil
  • 5 g baking powder (or 30 g sourdough starter)
  • 300 g apple or quince compote
  • 120 g flour
  • 1 apple, sliced optional

Instructions

  1. To a bowl, add all ingredients, and mix until homogenous..
  2. Add sliced apples and gently fold into batter.
  3. Transfer batter to a prepared cake pan (lined with parchment paper). Spread batter evenly.
  4. Top cake with sliced apple.
  5. Bake in preheated oven at 200 °C for 40 minutes (or until a toothpick inserted in the middle of cake comes out clean).
