A soup is the perfect way to use those dark green tops of leeks, as they will tenderize thoroughly.
Ingredients
- Leeks (green leaves), cut small
- Oil
- Broth
- Mustard
- Heavy cream
- Soy sauce
- Salt and pepper
- Potatoes optional
Instructions
- Add oil to a pot, stir the sliced leek in for 10 minutes.
- Add some warm broth, and let it cook until the leaves are soft and tender.
- Let the pot cool down a bit before blending with an immersion blender.
- Add mustard, soy sauce, salt, pepper and cream to taste.
