Leek soup

A soup is the perfect way to use those dark green tops of leeks, as they will tenderize thoroughly.

Ingredients

  • Leeks (green leaves), cut small
  • Oil
  • Broth
  • Mustard
  • Heavy cream
  • Soy sauce
  • Salt and pepper
  • Potatoes optional

Instructions

  1. Add oil to a pot, stir the sliced leek in for 10 minutes.
  2. Add some warm broth, and let it cook until the leaves are soft and tender.
  3. Let the pot cool down a bit before blending with an immersion blender.
  4. Add mustard, soy sauce, salt, pepper and cream to taste.
