Vietnamese phin coffee

Ingredients

For a 6 x 7 cm phin filter

  • 25 g coffee, ground
  • Water

Instructions

  1. Heat water to 90–96 °C.
  2. Place the phin on top of a cup.
  3. Add the ground coffee to the phin. Shake it so that the ground coffee is leveled. Add the gravity piece on top of the coffee.
  4. Gently pour hot water over everything, up to 1 cm above the gravity piece. Let the coffee bloom for a few minutes, it should look like wet brownies.
  5. Pour more hot water on top of everything, leaving 1 cm from the top. Close the phin to keep the heat in.
  6. The coffee should start dripping within the first two minutes. Let it drip until the end, press the wet ground coffee with the gravity piece.
  7. Serve hot, cold on ice, and/or with condensed milk to taste.
