Apple tarte tatin

My take on the classic tarte tatin

Ingredients

  • 5–6 apples (firm varieties are better)
  • 70 g sugar
  • 20 g butter or oil
  • 1 pie dough

Instructions

  1. Peel and cut the apples in thick slices.
  2. In a small pot, melt the butter (or use oil), and slowly add the sugar to make a golden caramel. If the caramel solidifies, add enough water to obtain a sirupy texture.
  3. In an oven-proofed pan, arrange the apple slices, and pour the caramel on top.
  4. Cover the apple slices with the pie dough, tucking the edges inside the pan.
  5. Poke a hole in the middle of the dough to let the pressure escape
  6. Preheat the oven to 180 °C, and bake for 45 minutes.
  7. Once baked, let rest for 5 minutes before turning over in a plate.
